Healthy Pumpkin Spice Muffins & Creamy Pumpkin Pie Smoothie

Today was the epitome of a fall day in southern ontario. The leaves are reaching their climax in colour-changing, the sun was warm, and the farmers markets were stocked with crisp apples and pumpkins for the taking. Farm country in the fall is a dream. Today we went biking through Paris, Ontario (26 K to be exact!) and finished it off with half a dozen freshly fried apple fritters from the Brown Dog Cafe. It doesn’t matter what diet your pretending to be on, there is never a reason to turn down a freshly fried apple fritter. 1378211_10151713201261089_745395088_n

Apples aside, veer into those baking aisles and stock up on your pumpkin, because there is SO many fun ways to enjoy the fall fave. I also hear pumpkin is good for you? Something like has vitamins? Win-Win.

I made these muffins for my Oma yesterday and they are the perfect mini-indulgence with your morning coffee. Low on sugar and oil, and light on flour, they wont weigh you down. The smoothie is a twist on my normal morning bev, but I have made it again and again for dessert purposes aswell. If you ever crave the pumpkin pie flavour minus all of the work and preparation, I dare you to make this blended drink.

Healthy Pumpkin Muffins Recipe (makes 6 muffins)

  • 1/2 cup pumpkin puree
  • 1/2 ripe banana mashed
  • 1/2 cup oat flour
  • 1/3 cup whole wheat flour
  • 3 tablespoon brown sugar
  • 1/2 teaspoon baking soda
  • teaspoon cinnamon
  • pinch nutmeg
  • pinch salt
  • 2 teaspoon maple syrup
  • 1 egg
  • 2 teaspoon vegetable oil
  • dash vanilla
  • 3 tablespoon almond milk

Method

  1. Preheat oven to 375 and prepare 6 muffin liners
  2. Combine flours, sugar, seasoning and baking soda (all dry ingredients)
  3. Combine pumpkin, almond milk, banana, maple syrup, egg, vanilla, and vegetable oil
  4. Fold dry ingredients into the wet. Do not overmix
  5. Pour into muffin liners, filling 90% to the top.
  6. Bake 17-18 minutes until lightly golden on top.

Creamy Pumpkin Smoothie Recipe (makes 2 glasses)

  • 1/2 cup pumpkin
  • 1/3 cup greek yogurt
  • 1/2 cup almond milk
  • 1 frozen banana
  • 4 dashes cinnamon
  • 2 dashes nutmeg
  • 1/2 teaspoon vanilla
  • teaspoon maple syrup

BLEND AND SERVE !
