The bridge from the first half of the day to the next; a lackluster lunch will almost always set you up for a failure of an afternoon. Have you ever brought a suck-y lunch because you were rushed, and then spent the afternoon dreaming of what concoctions you were about to get into when you arrived home? Or perhaps routed the nearest froyo-hut on your iphone.
This happened to me today when I stupidly packed a MEASLY kale and 1/4 sweet potato salad, light on the dressing. Im sorry… but 7am self -you underestimate me. I had hunger pangs all aft.
Here comes a delicious egg salad kale wrap that will guaranteed put a smile on your face come 12pm. And fill the rumble. Just boil the eggs the night before and you can whip it up in 2 minutes before you head out. Keep the lettuce wraps and the egg salad separate (obviously), and dont mind if people chirp the egg smell. They’re just jealous.
Skinny Egg Salad Kale Wraps (makes 2 wraps, 1 serving)
- 2 large boiled eggs (2 whites, and 1 yolk)
- 1 teaspoon red onion, finely minced
- 1 heaping tablespoon plain greek yogurt
- 1/2 teaspoon light mayonnaise
- 1 teaspoon chopped fresh parsley
- 1 teaspoon chopped fresh thyme (or dried)
- tiny pinch cumin
- 2 large kale leaves, trimmed if needed
Roughly chop up boiled eggs, and combine with ALL ingredients.
