The name says it all; luxuriously creamy curry dressing with a pleasantly sweet tang. Lip-smackingly-good!
This gal is currently making the slow transition to 95% vegan (perfection is daunting), over here and having so much fun doing it! To some people, the thought of adapting a vegan lifestyle all about restrictions and discipline. A year ago that would be me too. But now I see it as opening my eyes to not only a healthier way of life, but a more creative and exciting way to prepare food. When the main part of your meal doesn’t include animal product, it allows you to get craftier than you may have in the past. Your imagination can truly run wild with ways to make plant based meals taste and look amazing. Even more so, it is incredibly gratifying to share your nutritious foods with your family- and have them ask for seconds.
Making stews, baked goods, and salads that please my family as well as my nutrition standards is something that will always be the goal!
My fave ways to enjoy this dressing:
- Dressing in your creamy potato salad
- Massaged into kale
- Top your veggie burgers
- Drizzel on your sweet potato fries
- Dip your carrots in it
- Drink with a straw?
Sweet & Creamy Curry Dressing
- 1/2 cup hummus
- 2 teaspoon lemon juice
- 2 teaspoon water (or more if you like thinner consistency)
- 1 teaspoon maple syrup
- 1 teaspoon Dijon mustard
- 1 tablespoon yellow curry powder
- 1 clove of garlic, minced
- salt and pepper
- dash sriracha or cayenne
Simply whisk all ingredients together, taste test and then serve! The longer the flavours mellow together the better it tastes 🙂
