Then trusty resourceful vegans came along and created a trillion varieties of plant-based ceasar dressings that not only replicate the bright flavour of the traditional salad, but are nutritionally bountiful!
This ceasar salad recipe combines a few untraditional veggies for a hearty salad base, as well as the tangy/creamy/garlicy/tart components to make a well balanced ceasar dressing. This is the winning salad to make your ceasar-loving friends and family–while they are busy being blown away by the flavour they wont even realize that its vegan!
Green Queen Ceasar Salad Recipe (Serves 2)
- 2 cups kale, chopped
- 1 cup romaine, chopped
- 1/2 zucchini, shredded, sliced, or spiraled
- 1/2 avocado, sliced
- 1/3 cup chic peas
- 3 tablespoon hemp hearts
Vegan Ceasar Dressing
- 2 tablespoon cashews (preferably soaked for 1 hour plus)
- 1 heaping teaspoon Dijon mustard
- 1 teaspoon tahini
- 1 tablespoon water
- 1 tablespoon lemon
- 1/2 teaspoon worschtishire sauce
- 1 clove garlic, minced
- 1 teaspoon nutritional yeast
- salt and pepper
Combine all in a blender or food processor, until cashews have blended in with dressing. Taste and adjust if necessary!
Pour all over greens and toss, toss, toss!
