OMG Southwestern Kale & Quinoa Vegan Burger

This weekend I was craving meat…

On the sunny walk home through the snow my tummy was rumbling to a higher frequency…one that only a real man-burger could fill.

Or rather, a southwestern kale & quinoa burger. High in protein, great meaty texture and amazing flavour.

Unapologetically messy, satisfying and definitely requiring two hands to eat.

The ‘OMG’ is very necessary in describing this burger… paired with avocado lime sauce it provides an oh-wow moment upon first bite. (more…)

Cinnamon-kissed, packed with tart apple chunks and crunchy granola- these powerful muffins are a delicious way to fiber up!

I have been treading lightly on the muffin making lately, after producing my fair share of flavoured card board. Although sometimes I think I can just  throw any type of flour plus some dried fruit and call it a muffin masterpiece, the baking gods have other plans in mind 😉

The more creative I get in the kitchen, the more disasters that tend to occur- but this also leads to some pretty awesome ‘AHA’ moments too! Nothing ventured nothing gained right? (more…)

Fudgy Cacao-Coconut Cookies

coo 035                     It is with wide open arms that I welcome back my chocolate addiction. After my guiltless Christmas blitz of lindor’s for breakfast, lunch and dinner I said tootleoo to chocolate for a little while. (Terrible decision, I know).

Although the separation brought on initial anxiety and withdrawal, I was able to push through a month or so without calling on my dark, rich and tasty friend for comfort. I had less cravings, slept easier and my tummy felt great. Life was good. But I missed my dear friend. (more…)

Raw Peanut butter Cookie Dough Bites

022013Naturally sweet and chewy, dabbled with chunks of choc chips and kissed with peanut butter… These taste just like the real deal.

I’m a second stomach kinda gal. I may have polished off 3 bowls of chilli for dinner but that does stop the pangs of ‘I WANT CHOCOLATE’ coming from my brain.

Key-word; Brain. The brain tricks us eating into sugar when we are sad, lonely and bored all the time. Admittedly I usually decide its easier to go with the flow and indulge instead of letting it taunt me all night. But post Christmas sugar blitz I have been trying to break the cycle with some faux-sweet treats:

  • I have found the perfect chocolate-mint tea that sometimes satisfies (when paired with 3 squares 90% dark chocolate)
  • Berry smoothies work
  • Bananas dipped in peanut butter (for the peanut butta lova’s)
  • Banana ‘icecream’ (but I may or may not have broke my food processor blending dates)

And then there is these…. cookie dough balls….um yeah. Packed to the brim with energizing and satisfying nuts, sweetened with dates, and flavoured with peanut butter. h e l l y e a h (more…)

Skinny Mini Banana Brownie Muffins {GF}

IMG_9219 IMG_9269IMG_9259These mini chocolate bombs taste like a dark rich brownie, but eat like a muffin- ya got me?

The dark rich chocolate flavour is definitly satisfactory for every brownie fan but the dense crumby interior is what makes them muffin territory. I had every intention of creating a healthy two- bite brownie today. But the baking gods had other plans. The banana that was initially used as a natural sweetener, gave the brownies the most delightful banana chocolate muffin taste that cant be ignored. (more…)
