Fudgy Cacao-Coconut Cookies

coo 035                     It is with wide open arms that I welcome back my chocolate addiction. After my guiltless Christmas blitz of lindor’s for breakfast, lunch and dinner I said tootleoo to chocolate for a little while. (Terrible decision, I know).

Although the separation brought on initial anxiety and withdrawal, I was able to push through a month or so without calling on my dark, rich and tasty friend for comfort. I had less cravings, slept easier and my tummy felt great. Life was good. But I missed my dear friend. (more…)

Raw Peanut butter Cookie Dough Bites

022013Naturally sweet and chewy, dabbled with chunks of choc chips and kissed with peanut butter… These taste just like the real deal.

I’m a second stomach kinda gal. I may have polished off 3 bowls of chilli for dinner but that does stop the pangs of ‘I WANT CHOCOLATE’ coming from my brain.

Key-word; Brain. The brain tricks us eating into sugar when we are sad, lonely and bored all the time. Admittedly I usually decide its easier to go with the flow and indulge instead of letting it taunt me all night. But post Christmas sugar blitz I have been trying to break the cycle with some faux-sweet treats:

  • I have found the perfect chocolate-mint tea that sometimes satisfies (when paired with 3 squares 90% dark chocolate)
  • Berry smoothies work
  • Bananas dipped in peanut butter (for the peanut butta lova’s)
  • Banana ‘icecream’ (but I may or may not have broke my food processor blending dates)

Irresistably Chewy Protein Cookies {with Everything But The Kitchen Sink}

011023Oats, Quinoa, Peanut butter, Banana, Sunflower Seeds, Dates, Cranberries, Protein Powder, Chocolate Chips and sweetened with maple syrup.

I have an entertaining/dangerous habit of haphazardly throwing everything iv ever enjoyed into a bowl when baking sans recipe. Many a time it results in a creation where the batter tastes amazing but the finished product somewhat…confusing. Regardless, there is something very meditative about baking your own dream creation– especially when it turns out like these guys! I have been craving cookies like nobody’s business lately, but I wanted a variety that rather than making you eat 9 in a row, satisfied your tummy growls for more than a second.

Enter these gluten free, high fiber, protein PACKED monster cookies. They are addictively tasty in the way you love the average peanut butter choco chip. But these will make you feel amazing and keep you high energy between meals. (more…)

Pomegranate Dark Chocolate Oatmeal Cookies {vegan}

Skinny Mini Banana Brownie Muffins {GF}

The dark rich chocolate flavour is definitly satisfactory for every brownie fan but the dense crumby interior is what makes them muffin territory. I had every intention of creating a healthy two- bite brownie today. But the baking gods had other plans. The banana that was initially used as a natural sweetener, gave the brownies the most delightful banana chocolate muffin taste that cant be ignored. (more…)

Roasted Banana Loaf with Quinoa & Dark Chocolate

This banana bread tastes like the ultimate decadence, but is lower fat than the usual, and packs a protein punch with greek yogurt and quinoa. You probably wouldn’t think quinoa would improve the texture of your baked good, but in this case its the shining star. Each itty bitty seed provides surprise moisture and tenderness. (more…)

These beautiful balls of joy are as simple to make as they are fun- as they are YUM. You’ll feel like a chef at godiva as you roll your little ganache-balls in toasted nuts. Youl feel genious when you bite into them moments later and make a mental note to bring this recipe around christmas time.

Chewy Peanutbutter Chocolate Chunk Cookies (Flourless)

“Can a cookie ever be too chewy?”

That is a question I pose for you today after enjoying the most ooey goeey peanutbutter chocolate chunk cookies. These have so much flavor they should be ILLEGAL, they satisfy every rees cup craving you’ve ever had without being overbearing.

This is a cookie you eat on a sunday night with a litre of milk by your side. They are messy you may need a plate. They do not travel that well because of their gooey nature so best to enjoy them in the comfort of your own home.

“wow I just successfully tossed  together random things in my cupboard to make edible crunchy GOLD essentially…and Im never going back”.

You will then immediately start eating it by the handfuls half-heartedly trying not to cover the entire kitchen floor with coconut flecks (thats what the vacuums for anyways)
